Give your cake a fabulous foundation with a royal-icing-covered cake board and gum-paste plates.
Fill your cake with delicious buttercream before carving it and adding a crumb coat. Colette will demonstrate how to cover the cake in fondant using a two-step method and how to dowel your cake so it has the proper support.
Add beautiful quilted texture to your tiers with a stitching tool. Make either straight lines or trace free-flowing custom designs right on the cake.
Colette shares her tips and techniques for making beautiful wavy and circular inlays as well has her lovely, whimsical puffy flowers.
Mix gum paste and fondant together in equal proportions to create a richly textured covering, ruffled poufs and charming embellishments including blueberries, curlicues and lace.
Work with gum paste to make striped candles, flowers, leaves, ribbon roses and fringed bows.
Turn your focus to the exterior of the cake as Colette demonstrates painting flowers and adding swags, pearls and a tassel to the back side of your cake.
It's time to add the finishing details, a fondant rope and a bead border, before you stack the cake, adding the proper support for each tier along the way.

Colette Peters

With a master's degree in painting from Pratt Institute in New York, and eight years' experience as a designer for Tiffany & Co., Colette brings a trained artistic eye to her work in cake decorating. She pioneered the now-classic designs of the topsy-turvy cake and gift box cake as contributions to Tiffany Taste and The Tiffany Wedding. Colette has published five books and appeared in a host of television programs over the years. Her work has been featured in The New York Times, Food & Wine and Modern Bride, among others. Colette teaches cake decorating classes around the world and at her own school in New York City. Colette is also a longtime member of ICES (International Cake Exploration Société).
